To prepare this dish, first follow my standard recipe for making Turmeric rice. In a large skillet, heat up 3 tablespoons of olive oil for about 1 minute before adding in a medley of sliced red onions, tomatoes, and a mixture of peas and carrots. Season generously with 1 teaspoon each of ground black pepper and smoked paprika. Let this base cook for about 3 minutes under medium heat before adding in about 2 cups of roughly chopped kale greens (be sure to first wash the leaves thoroughly and trim the tough stems before cutting). Sprinkle about 1/4 teaspoon of salt and stir thoroughly to blend with the base ingredients. Allow this to cook for about 5 minutes then stir in the cooked turmeric rice and mix to ensure uniform distribution. After about 2 minutes, turn off the heat and serve hot as a complete meal on its own or with a soup or stew of your choice for a delightful and fulfilling meal.
